The reason I haven't posted recently is because I have been busy producing artwork for Zazzle. Here is my all over print Wooden nutcracker tote bag, ideal for Christmas.

A Good Low Carb Substitute for Pizza

I have been following a low carb diet since April after putting on over a stone and a half, which had gradually crept up after I stopped weighing myself. I chose a low carb diet because I enjoy low carb foods and find it easy to follow. It is a slow way to loose weight, but if you adopt the diet as a lifestyle choice it is easy to keep to. I have now reached my target weight and retrained my eating habits, so I am confident I will be able to maintain it. 

The one food I missed the most was pizza, and after several attempts to find a substitute I have found a delicious alternative which I will share with you. First it is necessary to find something to use as a base, I have found marrow slices are perfect. The slices can be topped with a small amount of tomato pizza topping, then cheese and any other low carb topping of your choice. I prefer to use chopped mushroom, onion, black olives and anchovies, delicious!

Here are the instructions
Pre heat the oven to 180, and add some olive oil to an oven proof dish, season with salt and pepper, and add some thinly sliced marrow. Put in the oven for 5 minutes, then take out and turn the slices, put in for a further 5 minutes.





Take out and smear thinly with tomato based pizza topping sauce.


Now the fun part add cheese, I prefer Mozzarella with cheddar. Thickly spread the cheese over the marrow and add your toppings.


Sprinkle the toppings evenly over the cheese. 



I put the mushrooms and onions on first, then add the olives and anchovies.



Put back in the oven until the cheese is bubbling and the marrow is tender, about 20 minutes in my oven


Serve with salad and coleslaw and enjoy!

I actually prefer this version to a bread based version, and since I have cut out bread products I have never had indigestion.
